Baked cod, cherry tomatoes and thyme

Preparation for the Cod:
Preheat the oven to 180°C.
Place the cod fillets on a baking tray. Salt and pepper the fillets on both sides.
Preparation of cherry tomatoes:
Wash and cut the cherry tomatoes in half. Scatter them around the cod on the tray. Add chopped garlic and sprigs of thyme
Drizzle everything with olive oil, and add a few quarters of lemon to flavor the dish.
Cooking:
Cook the dish for 15 to 20 minutes, depending on the thickness of the cod nets. The fish should be well cooked but still tender and juicy.
Check the cooking by making sure that the cod meat is easily pricked with a fork.

Serving:
Serve the roast cod with candied cherry tomatoes and cooking juice. Add a little chopped fresh parsley to garnish and accompany a few quarters of lemon for an extra touch of freshness.
